Welcome to Covington Creek Candle Company! I'm so glad you stopped in for a visit. I'm committed to creating a stable lifestyle by self sufficiency. Prices are going to keep going up. Food recalls are increasing. I don't know about you but I like to know how my food was grown and that I'm the one that canned it. I want to help everyone become more self sufficient whether you live in a apartment, the burbs, a acre or two or more. Of course we can't do everything but I think you will be amazed at how much control you can have.

My home business now includes quilted items and rustic home crafts in addition to creating the best and healthiest cold process soap, 100% pure soy candles, bees wax candles and natural/organic salves and lip balm as possible. Many say I have the best Fort Wayne handcrafted soap, salves and candles. I am continuing to look for a few acres to grow my own ingredients and move the shop part out of my home and into a separate building.

For one of our carry ins at work I decided to make coleslaw. No one carries in coleslaw it seems anymore. I was surprised at the response I got. One talked about how great Carson's Coleslaw is, another KFC. In all honesty I had never made coleslaw before so I set out on a mission to find those recipes. It took a lot of searching but I finally found one that said it was a Carson's copycat recipe. I made it and it did get rave reviews and the seal of approval from some who had eaten the real thing. Of course now that website no longer has it post but after 3 weeks of going thru my tons and tons of recipes I found it today! So here it is. And if I ever lose that little old piece of paper again it will be safe right here on my blog. Let me know how you like. I would love to hear from you!

 
Carson's Coleslaw
 
  • 3 Tablespoons Mayo
  • 1 1/2 Tablespoons Apple Cider Vinegar
  • pinch salt
  • 1/2 garlic clove, minced
  • 1 teaspoon sugar
  • grated cabbage (I picked up a 16 oz bag of already shredded red and green cabbage with carrots.)
Mix the dressing ingredients together. Taste and adjust as necessary. Add the cabbage (or cabbage and carrot mix).
 
I tripled the sauce recipe and used 2 bags of the shredded cabbage.
 
I read a few reviews for Carson's and one said it had a taste of horseradish, another said it had onion. So next time I may try adding those items. Will post it when I do and how it turned out.
